About Us

Our story began in 1985 in Roxas City, Capiz, Philippines, when my parents, Edward and Fe Lynn (pictured above), opened a small restaurant that quickly became a local favorite for its smoky, tangy chicken inasal. A few years later, our family moved to Bacolod City in 1988, bringing our cherished recipe and love for authentic Filipino flavors with us.
What started as a humble chicken stand on the street slowly grew into something bigger. My parents worked tirelessly—serving students in the canteens of St. Scholastica’s Academy and Colegio San Agustin–La Salle, before eventually opening our family restaurant along North Drive Avenue in Bacolod City. Their passion for real, honest cooking turned a simple backyard recipe into a beloved local tradition.

Today, I’m proud to carry that legacy here in Chicago through JM Manokan—bottling our family’s original Chicken Inasal recipe so people everywhere can taste the same smoky, garlicky, lemony warmth that’s been part of our family for decades. Every bottle is made with the same love, pride, and authenticity my parents started with all those years ago.
